• ⅔ cup plain Greek yogurt
• 1 tablespoon lemon juice
• 1 tablespoon extra-virgin olive oil
• Salt and pepper to taste

Place all ingredients in a small bowl and stir until combined. Season with salt and pepper to taste and refrigerate until ready to serve.

• 1¾ cups coarsely grated zucchini (from 1 medium zucchini)
• 3 scallions, thinly sliced
• 2 tablespoons chopped fresh mint
• 2 tablespoons chopped fresh cilantro
• 1–2 teaspoons grated garlic
• 1 teaspoon ground cumin
• 1 teaspoon salt
• ½ teaspoon black pepper
• ½ teaspoon cayenne pepper
• 1 pound ground turkey
• 3 tablespoons extra-virgin olive oil
In a large bowl, combine zucchini, scallions, mint, cilantro, garlic, cumin, salt, pepper, and cayenne.
Add the ground turkey and mix gently until evenly combined. Form into 3- to 4-inch patties.
Preheat the oven to 200°F.
Heat olive oil in a large skillet over medium-high heat. Lower heat to medium once hot.
Cook patties in batches for about 5 minutes per side, or until browned and cooked through to an internal temperature of 165°F.
Keep finished patties warm in the oven while cooking remaining batches.
Serve with the lemony yogurt sauce.
