Inspired by Sicily’s famous granita shops, this tropical frozen dessert uses ripe mango, pineapple, and coconut water for a naturally sweet and hydrating treat. It’s a perfect make-ahead dish for warm evenings, and ideal for seniors looking to enjoy a sweet treat that supports wellness. Serves 6–8.
– Susan Puckett
Ingredients:
3 cups chopped ripe mango
1 cup chopped fresh pineapple
1 cup coconut water
Juice of 2 limes (about ¼ cup)
2 tablespoons sugar, or to taste
Instructions:
In a food processor, blend the mango and pineapple until smooth.
Pour into a large bowl or pitcher. Stir in coconut water, lime juice, and sugar to taste.
Transfer to a 9x5-inch or 8x8-inch cake pan. Freeze for 3 hours, stirring or whisking every hour.
Once nearly frozen, scrape with a fork to create a shaved ice texture. Cover with plastic wrap and freeze again.
Before serving, let sit at room temperature for 10–15 minutes if needed. Scrape again and scoop into bowls.
Leftovers can be stored in an airtight container in the freezer for up to 2 weeks.
Hydration Support: Coconut water is rich in electrolytes that support hydration, especially important for older adults.
Naturally Low in Sugar: Ripe mango and pineapple offer sweetness without needing much added sugar.
No-Cook & Easy Prep: Great for seniors with limited energy or those avoiding stovetop use.
