
“White chili” has become a popular alternative to traditional red chili—and a reliable crowd-pleaser for anyone who prefers milder spice or lighter meats. Most versions combine turkey or chicken, cannellini beans, and green chiles in a creamy base. This one takes a smarter approach by blending an extra can of beans into the pot instead of adding heavy cream. The result is a thick, satisfying chili that’s lower in fat while higher in fiber and protein.
A handful of Monterey Jack cheese melts into the mixture for extra richness, and the leftovers freeze beautifully. Whether you’re feeding guests or stocking your freezer with ready-to-heat meals, this recipe delivers comfort and nutrition in one bowl.
Serves 8
• 1½ pounds ground turkey (or chicken)
• 1 medium yellow onion, chopped
• 5 cloves garlic, minced
• 2 (4-ounce) cans diced green chiles
• 1 tablespoon ground cumin
• 2 teaspoons ground coriander
• 2 teaspoons chili powder
• 2 teaspoons dried oregano
• 1 teaspoon ground white pepper
• ½ teaspoon cayenne pepper
• 1½ teaspoons salt, plus more to taste
• 5 cups chicken broth
• 3 (15-ounce) cans cannellini beans
• 2 cups shredded Monterey Jack cheese
Optional garnishes:extra shredded cheese, salsa, sour cream or Greek yogurt, diced avocado, sliced olives, chopped cilantro
In a large pot over medium heat, cook the turkey, onion, and garlic until the turkey is fully cooked, about 10 minutes. Add the green chiles, cumin, coriander, chili powder, oregano, white pepper, and salt. Cook and stir for 5 minutes.
Pour in the chicken broth and simmer for 10 minutes. Add 2 cans of cannellini beans. Puree the third can in a blender or food processor, then stir it into the pot along with 1 cup of shredded cheese.
Simmer for another 10 minutes, until the chili thickens and the cheese is fully melted. Ladle into bowls and top with additional cheese and desired garnishes.
