If you don’t already have Tajin seasoning in your pantry, this dish will make it a staple. This bold blend of chili, lime, and salt livens up simple chicken thighs in a no-fuss sheet pan dinner. Ingredients:
2 limes
2 tablespoons Tajin seasoning
2 tablespoons agave or honey
1 tablespoon olive oil
4 meaty bone-in, skin-on chicken thighs
Instructions:
Preheat the oven to 400°F. Zest and juice one lime into a large bowl. Cut the second lime into 4 wedges and set aside.
Whisk in the Tajin, agave (or honey), and olive oil. Add the chicken and coat thoroughly, getting under the skin. Let marinate for 15–20 minutes.
Arrange the chicken thighs on a parchment-lined sheet pan. Roast for about 30 minutes or until the thickest part of the meat reaches 165°F.
Serve with lime wedges for extra zip.
