This recipe, adapted from How to Cook Everything Fast, combines lean beef and vitamin-rich broccoli in a flavorful stir fry. Tossed with ramen noodles, it’s a hearty and balanced dinner that’s ready fast.
Serves 4 to 6
1 lb boneless steak
9 oz ramen noodles, no seasoning packets
4 tbsp vegetable oil
Salt and black pepper
1 tbsp minced fresh ginger
2 large cloves garlic, minced
12 oz broccoli florets
4 scallions, trimmed and chopped
1 tbsp toasted sesame oil
2 tbsp hoisin sauce
Red pepper flakes, optional
Bring a pot of water to boil. Slice beef thin against the grain. Cook noodles, then drain.
Heat 2 tbsp vegetable oil in a large skillet over high heat. Add beef, season with salt and pepper, and cook 3–4 minutes, leaving some pieces slightly rare. Transfer to a plate.
Add ¼ cup water to skillet, scraping up browned bits. Pour juices into a small bowl.
Add remaining 2 tbsp oil to skillet. Stir-fry broccoli 3–5 minutes, then add ginger and garlic. Cook 1 minute more.
Add ¼ cup water and reserved juices. Cover and cook until broccoli is tender, 3–5 minutes.
Return beef to skillet with scallions, sesame oil, and hoisin. Toss until heated through.
Add noodles to skillet (or combine in a serving bowl). Toss to coat, sprinkle with red pepper flakes if desired, and serve.
