Healthy Shrimp Scampi Fettuccine Recipe for Seniors: Low-Fat, Protein-Packed Meal

Shrimp scampi is a universally beloved Italian classic that can come together in a matter of minutes. This recipe, adapted from one by the New York Times’ Melissa Clark, goes easy on the butter and amps up the flavor with generous doses of garlic, parsley, and lemon juice. Here it’s paired with fettuccine to make it a full meal, but you could simply serve it with a hunk of crusty bread to sop up with savory juices. Serves 4. – Susan Puckett

Ingredients

·      Salt & pepper

·      8 ounces fettuccine

·      2 tablespoons butter

·      2 tablespoons extra-virgin olive oil

·      4 garlic cloves, minced

·      ½ cup white wine or broth

·      Pinch of red pepper flakes

·      1 ½ pounds large or extra-large peeled shrimp, thawed if frozen, with or without tails

·      1/3 cup chopped parsley leaves

·      1 tablespoon fresh lemon juice, plus lemon wedges for serving

·      Crusty bread, optional

Instructions

1.     Bring a large pot of well-salted water to a boil and cook the pasta according to package directions until al dente. Drain, then return to the pot off the heat.

2.     Meanwhile, in a large skillet, melt the butter with the olive oil over medium heat. Add the garlic and sauté until fragrant but not browned, about a minute. Add the wine or broth, ½ teaspoon of salt, red pepper flakes, and 7 or 8 grindings of black pepper.

3.     Bring to a simmer, and allow the liquid to reduce by half, about 2 minutes.

4.     Add the shrimp and sauté until they just turn pink, 2 to 4 minutes. Stir in the parsley and lemon juice. Add the pasta to the skillet and toss to coat.

5.     Serve with lemon wedges and crusty bread, if desired.
