• 1¼ cups chocolate graham cracker crumbs (about 8 whole sheets)
• 2 tablespoons granulated sugar
• 2 tablespoons water
• 1 tablespoon melted unsalted butter
• 2 ounces semisweet chocolate, chopped
• 24 ounces 1% cottage cheese
• 8 ounces 1/3 less-fat cream cheese, room temperature
• ¾ cup granulated sugar
• ½ cup unsweetened cocoa powder
• 2 tablespoons all-purpose flour
• 1 egg
• 2 egg whites
• 2 teaspoons instant espresso powder
• 2 teaspoons pure vanilla extract
• Fresh berries and mint sprigs, for serving
Preheat oven to325°F. Place a small roasting pan filled one-third with water on the lower rack. Lightly coat a 9-inch springform pan with cooking spray and wrap the outside bottom with foil.
Make the crust:Mix crumbs, sugar, water, and melted butter until moistened. Press into the bottom of the pan. Freeze for 15 minutes.
Make the filling:Melt the chocolate in the microwave on medium power until smooth. Puree cottage cheese in a food processor until completely smooth. Add cream cheese, sugar, cocoa, and flour; process until smooth. Add egg, egg whites, espresso powder, and vanilla; blend until incorporated. Add melted chocolate and pulse to combine. Pour over crust.
Bake on the upper rack for50–55 minutes, until just set and slightly jiggly in the center. Turn off oven and let stand inside for 1 hour. Remove, run a knife around the edge, and cool to room temperature (about 2 hours).
Refrigerate for at least 8 hours or overnight. Let stand at room temperature for 1 hour before serving. Slice with a clean, hot knife for smooth cuts. Serve with fresh berries and mint.
