
Everyone deserves a sweet treat now and then. These gluten-free chocolate chip cookies offer a delicious option when you're craving something sweet without loading up on added sugar.
Adapted from Michael Symon'sFix It with Food, the cookies use almond flour instead of traditional wheat flour. Almond flour contributes protein and other nutrients while giving the cookies a naturally rich, slightly nutty flavor.
Honey provides the sweetness, while extra vanilla and bittersweet chocolate create a deep, satisfying flavor. The result is a cookie that's soft and cakey in the center with lightly crisp edges.
A small sprinkle of flaky sea salt while they're still warm takes the flavor up another notch.
Makes 16–18 cookies
2 cups almond flour
½ teaspoon baking soda
½ teaspoon kosher salt
2 tablespoons unsalted butter, at room temperature
¼ cup raw honey
1 large egg
2 tablespoons heavy cream
2 teaspoons vanilla extract
½ cup bittersweet chocolate chips, gluten-free if desired
Flaky sea salt, optional
In a medium bowl, whisk together the almond flour, baking soda, and kosher salt.
In a large bowl, whisk together the butter and honey.
Add the egg, heavy cream, and vanilla and whisk until well combined.
Add the almond flour mixture to the wet ingredients and stir with a wooden spoon until combined.
Fold in the chocolate chips.
Cover the bowl with plastic wrap and refrigerate for at least2 hours or overnight.
Preheat the oven to350°F.
Line a baking sheet with parchment paper or a silicone baking mat.
Use a 1-ounce scoop to portion the dough onto the prepared baking sheet. Alternatively, pinch off pieces of dough and roll them into approximately 2-inch balls.
You should have16–18 cookies.
Flatten each ball slightly with the palm of your hand.
Bake for approximately15 minutes, until the edges are golden brown and the centers are puffed.
Remove from the oven and let the cookies rest on the baking sheet for5 minutes.
If desired, sprinkle with flaky sea salt while they're still warm.
Transfer to a cooling rack and allow them to cool completely.
Store in an airtight container for up to3 days.
Using almond flour instead of traditional flour gives these cookies some protein and fat, making them more substantial than a typical sugar-heavy cookie.
The recipe relies on honey and the natural sweetness of almond flour rather than requiring additional granulated sugar. That doesn't make them a low-sugar food, but it does keep the ingredient list simple.
