Healthy Recipe: Lightened-Up Chocolate Truffle Cheesecake

Traditional cheesecake is undeniably delicious—but also heavy in saturated fat and calories. This smartly redesigned version replaces most of the cream cheese with 1% cottage cheese, dramatically increasing protein while reducing fat. Cocoa powder and a touch of melted semisweet chocolate create a deep, rich flavor that feels indulgent without going overboard.

The result is silky, chocolatey, and surprisingly balanced. It’s proof that dessert can support moderation and muscle maintenance at the same time. Serve with fresh berries for added fiber and antioxidants.

Ingredients

Crust

• 1¼ cups chocolate graham cracker crumbs (about 8 whole sheets)
• 2 tablespoons granulated sugar
• 2 tablespoons water
• 1 tablespoon melted unsalted butter

Filling

• 2 ounces semisweet chocolate, chopped
• 24 ounces 1% cottage cheese
• 8 ounces 1/3 less-fat cream cheese, room temperature
• ¾ cup granulated sugar
• ½ cup unsweetened cocoa powder
• 2 tablespoons all-purpose flour
• 1 egg
• 2 egg whites
• 2 teaspoons instant espresso powder
• 2 teaspoons pure vanilla extract
• Fresh berries and mint sprigs, for serving


Directions

  1. Preheat oven to325°F. Place a small roasting pan filled one-third with water on the lower rack. Lightly coat a 9-inch springform pan with cooking spray and wrap the outside bottom with foil.

  2. Make the crust:Mix crumbs, sugar, water, and melted butter until moistened. Press into the bottom of the pan. Freeze for 15 minutes.

  3. Make the filling:Melt the chocolate in the microwave on medium power until smooth. Puree cottage cheese in a food processor until completely smooth. Add cream cheese, sugar, cocoa, and flour; process until smooth. Add egg, egg whites, espresso powder, and vanilla; blend until incorporated. Add melted chocolate and pulse to combine. Pour over crust.

  4. Bake on the upper rack for50–55 minutes, until just set and slightly jiggly in the center. Turn off oven and let stand inside for 1 hour. Remove, run a knife around the edge, and cool to room temperature (about 2 hours).

  5. Refrigerate for at least 8 hours or overnight. Let stand at room temperature for 1 hour before serving. Slice with a clean, hot knife for smooth cuts. Serve with fresh berries and mint.
