Serves 2
• 3 cups chopped romaine lettuce hearts
• 1 cup halved cherry tomatoes
• ¼ cup thinly sliced red onion
• ½ cup sliced Nicoise or other olives
• ½ cup slivered oil-packed sun-dried tomatoes, drained
• 1 tablespoon capers, drained
• 1 (6-ounce) can tuna, preferably oil-packed, drained and flaked
• ½ cup crumbled feta cheese
• 2–3 hard-cooked eggs, peeled and quartered
• Salt and pepper to taste
• Greek vinaigrette or oil-and-vinegar dressing
Place the lettuce, tomatoes, onion, olives, sun-dried tomatoes, capers, tuna, and feta in a large bowl.
Add dressing and toss gently until evenly coated.
Taste and season with salt and pepper as needed.
Divide among serving bowls or plates.
