
This lighter take on classic artichoke dip swaps mayo for protein-rich Greek yogurt while keeping all the creamy, savory flavor. It’s quick to blend, easy to digest, and perfect for healthy senior entertaining.
Ingredients
1 jar (12 ounces) marinated artichoke hearts
3 anchovy fillets in oil, or 1½ teaspoons anchovy paste
⅓ cup lightly packed flat-leaf parsley leaves
1¾ cups plain Greek yogurt (full-fat or no-fat)
¼ cup extra-virgin olive oil, plus more for drizzling
Salt and freshly ground pepper
Pita chips, crudités, or crackers for serving
Instructions
Drain the artichokes, reserving 3 tablespoons of the marinade.
Place the artichokes, reserved marinade, anchovies (or paste), and parsley in a food processor and pulse until the parsley is finely chopped.
Add the yogurt, olive oil, 1 teaspoon salt, and a few grindings of pepper. Pulse until smooth and combined.
Transfer to a serving bowl, taste, and adjust seasoning as needed. Drizzle with additional olive oil and serve with chips or vegetables.
