Healthy Recipe: French-Style Potato and Watercress Salad

Potato salad is a classic favorite at picnics, barbecues, and family gatherings. But if you're looking for a lighter alternative to the traditional mayonnaise-based version, this French-inspired recipe is worth trying.

Instead of a heavy dressing, warm Yukon gold potatoes are tossed with a simple Dijon mustard vinaigrette. The potatoes absorb the tangy flavors as they cool, creating a delicious salad without the need for mayonnaise.

Thinly sliced red onion adds a little crunch, while fresh watercress brings a peppery bite and a pop of color.

It's an easy, versatile side dish that pairs beautifully with grilled chicken, steak, or fish. You can also bring it to a picnic or serve it alongside your favorite summer meal.

Serves 4

Ingredients

  • 1½ pounds unpeeled Yukon gold potatoes, cut into ½- to 1-inch pieces

  • Salt, for cooking and seasoning

  • 2 tablespoons red wine vinegar

  • 1 tablespoon Dijon mustard

  • 3 tablespoons extra-virgin olive oil

  • ½ medium red onion, thinly sliced

  • 2 cups lightly packed watercress leaves

  • Black pepper, to taste

Instructions

1. Cook the Potatoes

Place the potatoes in a saucepan and cover with cold water. Add 1 tablespoon of salt and bring to a boil.

Reduce the heat to medium-low and simmer for 10–15 minutes, or until the potatoes are fork-tender but not mushy.

2. Drain and Dry

Drain the potatoes well in a colander, then return them to the saucepan off the heat. Let them sit briefly to allow excess moisture to evaporate.

Keep the potatoes warm so they can absorb the vinaigrette.

3. Prepare the Dressing

In a large bowl, whisk together the red wine vinegar, Dijon mustard, and olive oil until well combined.

Add the warm potatoes and sliced red onion. Toss gently to coat everything with the dressing.

Season with salt and black pepper to taste.

4. Add the Watercress

Allow the salad to cool slightly. Just before serving, gently fold in the watercress leaves.

Taste and adjust the seasoning with additional salt and pepper as needed.

Serve at room temperature.

Easy Swaps & Recipe Notes

  • Try another potato:Red potatoes or other waxy potatoes work well because they hold their shape after cooking.

  • Make it ahead:Cook the potatoes and toss them with the vinaigrette and onion in advance. Add the watercress just before serving to keep it fresh.

  • Adjust the onion:If raw red onion tastes too strong, soak the slices in cold water for several minutes, then drain well.

  • Add fresh herbs:Chopped parsley, dill, or chives can complement the mustard vinaigrette.

  • Pair it with protein:Serve alongside grilled chicken, fish, or steak to make a balanced meal.

  • Store leftovers safely:Refrigerate leftovers promptly in a covered container and enjoy within 3–4 days.

Why This Recipe Is Great for Senior Fitness

1. Potatoes provide energy

Potatoes supply carbohydrates that help fuel everyday activities, from walking and gardening to strength training. They also provide potassium and vitamin C.

Leaving the skins on adds texture and retains additional nutrients.

2. Watercress adds valuable nutrients

Watercress contributes vitamins, minerals, and plant compounds while adding freshness and a distinctive peppery flavor. Including a variety of vegetables in your meals is a simple way to support overall health.

3. A lighter dressing keeps the flavors fresh

The Dijon vinaigrette delivers plenty of flavor with a short list of ingredients. Using olive oil instead of a mayonnaise-based dressing also provides unsaturated fats.

4. It's easy to prepare and enjoy

Healthy eating doesn't need to involve complicated recipes or expensive ingredients. This salad uses familiar, accessible foods and requires only a saucepan and a mixing bowl.

Pair it with a protein-rich main dish to create a satisfying meal that supports your body's nutritional needs as you age.

Small Changes That Support a Stronger Life

Maintaining strength and independence involves more than exercise alone. Eating a variety of nutritious foods, getting enough protein, and staying physically active all contribute to healthy aging.

This potato and watercress salad is a simple way to add variety to your meals without sacrificing flavor.

Because healthy habits don't have to be complicated. Sometimes, a few fresh ingredients and a simple recipe are all you need to make a meal you'll look forward to enjoying.
