
You don’t have to wait for peaches to be perfectly ripe to make this simple, summery recipe. Even firm peaches soften beautifully as they roast alongside tender strips of boneless, skinless chicken thighs.
Garlic, fresh ginger, basil, and a splash of white wine create a savory sauce that balances the natural sweetness of the peaches.
Frozen or fully ripe peaches can also work, making this recipe a little more flexible depending on what you have on hand.

2–3 medium peaches, preferably firm
1–1½ pounds boneless, skinless chicken thighs, cut into 1-inch-wide strips
2 tablespoons extra-virgin olive oil
2 tablespoons dry white wine, dry sherry, or dry vermouth
2 tablespoons chopped fresh basil, divided
2 garlic cloves, minced
1 tablespoon grated fresh ginger
½ teaspoon salt, plus more to taste
½ teaspoon black pepper, plus more to taste
Crusty bread and/or cooked rice
Green vegetable of your choice
Preheat the oven to400°F.
Cut the peaches in half and remove the pits. Slice them about ½-inch thick.
Place the peaches, chicken, olive oil, wine, 1 tablespoon of the basil, garlic, ginger, salt, and pepper in a 9x13-inch baking pan.
Toss everything together until the chicken and peaches are evenly coated, then spread into an even layer.
Roast for about20 minutes, or until the chicken is cooked through and the peaches have softened.
The chicken should reach165°F internallyfor food safety.
Sprinkle with the remaining fresh basil.
Serve over rice or alongside crusty bread for soaking up the flavorful juices. Add a green vegetable for a complete meal.
No fresh peaches?Frozen peaches can work well. There’s no need to wait for peach season.
