Cauliflower is one of the most versatile vegetables around. It's rich in fiber and nutrients, naturally low in calories, and takes on the flavors of whatever seasonings you pair it with.
In this recipe, roasted cauliflower gets a flavorful upgrade from warm spices, chewy pearl couscous, and a bright parsley-lemon sauce. The combination creates a satisfying vegetarian meal with layers of flavor, from the lightly charred cauliflower to the tangy, fresh herbs.
One important tip: Be sure to usepearl couscous, also called Israeli couscous. Unlike traditional Moroccan couscous, which has a fine, grain-like texture, pearl couscous consists of larger, chewy pasta-like beads.
Toasting the couscous with olive oil and some of the spice blend before adding water brings out a deeper, nuttier flavor. Finish with crumbled feta if you'd like a creamy touch and some additional protein.
Serves 4
1 cup lightly packed flat-leaf parsley leaves
1 small shallot, coarsely chopped
2 tablespoons Dijon mustard
Finely grated zest and juice of ½ lemon
1 tablespoon extra-virgin olive oil
1½ teaspoons sweet paprika
¾ teaspoon ground cumin
¾ teaspoon salt
½ teaspoon black pepper
¼ teaspoon cayenne pepper
Bite-size florets from 1 head cauliflower
2 tablespoons extra-virgin olive oil
1 tablespoon extra-virgin olive oil
1 cup uncooked pearl (Israeli) couscous
1½ cups boiling water
½ cup crumbled feta cheese, optional
Preheat the oven to400°F.
Place the parsley, shallot, Dijon mustard, lemon zest, lemon juice, and 1 tablespoon of olive oil in a mini food processor or blender.
Pulse until the ingredients are well blended.
Don't have a food processor? Finely chop the parsley and shallot by hand, then stir them together with the remaining sauce ingredients. The result will have a more rustic texture.
Set the sauce aside.
In a small bowl, mix together the paprika, cumin, salt, black pepper, and cayenne.
Place the cauliflower florets on a large sheet pan. Drizzle with 2 tablespoons of olive oil and sprinkle with about half of the spice mixture.
Toss until the cauliflower is evenly coated, then spread it in a single layer.
Roast for25–30 minutes, stirring occasionally, until tender and lightly charred.
While the cauliflower roasts, heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
Add the pearl couscous and the remaining spice mixture. Cook for3–4 minutes, stirring, until the couscous is lightly toasted.
Carefully pour the boiling water into the saucepan.
Reduce the heat to low, cover, and simmer for10–12 minutes, or until the liquid has been absorbed and the couscous is tender.
Follow the package directions if your couscous calls for a different amount of liquid or cooking time.
Transfer the cooked couscous to a large bowl.
Add the roasted cauliflower and parsley-lemon sauce. Toss gently to combine, then divide among four serving bowls or plates.
Top with crumbled feta, if desired.
Serve warm.
Add more protein:Crumbled feta adds some protein, but for a more substantial meal, serve with chickpeas, lentils, or grilled chicken.
Make it dairy-free:Simply leave out the feta.
Adjust the heat:Reduce or omit the cayenne if you prefer a milder dish.
Try different herbs:Fresh cilantro or a combination of parsley and mint can give the sauce a different flavor.
Add more vegetables:Roasted carrots, red onion, or zucchini can complement the cauliflower.
Make it ahead:Roast the cauliflower and prepare the sauce in advance. Cook the couscous closer to serving time for the best texture.
Keep in mind:Pearl couscous is made from wheat, so it is not gluten-free. For a gluten-free alternative, serve the cauliflower and sauce over quinoa instead.
