• ¼ cup balsamic vinegar
• 1 cup sliced strawberries
• 1 cup mozzarella pearls (or diced fresh mozzarella)
• 1 cup halved cherry tomatoes
• 1 ripe avocado, peeled, pitted, and diced or sliced
• ⅓ cup torn fresh basil and/or mint leaves
• ⅓ cup toasted, coarsely chopped pecans
• 2 tablespoons extra-virgin olive oil, plus more if desired
• Sea salt and freshly ground black pepper
• Tender lettuce leaves (optional)
Pour the balsamic vinegar into a small saucepan and bring to a gentle simmer over medium heat. Reduce the heat to low and cook until the vinegar has reduced by half and thickened into a syrup, about 8–10 minutes. Remove from the heat and allow it to cool.
In a large shallow bowl, combine the strawberries, cherry tomatoes, mozzarella, avocado, toasted pecans, and basil or mint.
Drizzle with the olive oil and season with sea salt and freshly ground black pepper. Toss gently to combine.
