Looking for a colorful, satisfying meal that doesn't rely on meat? This soba noodle bowl combines crispy tofu, roasted vegetables, crunchy peanuts, and fresh mint in a bright lime-sesame dressing.
Japanese soba noodles have a distinctive nutty flavor and a pleasantly firm texture. They're traditionally made with buckwheat flour, although many varieties also contain wheat flour. Paired with protein-rich tofu and peanuts, they make a hearty base for this plant-based dinner.
Roasting the tofu with a light cornstarch coating helps it develop a crisp exterior, while green beans, red bell pepper, and shallots add color, texture, and nutrients.
The finishing touch is a tangy dressing made with lime juice, lime zest, and toasted sesame oil. Fresh mint brightens every bite.
This recipe is adapted from a dish in Ali Slagle'sI Dream of Dinner (So You Don't Have To). Feel free to substitute vegetables you already have on hand.
Serves 4
1 (14- to 15-ounce) block firm or extra-firm tofu
12 ounces trimmed green beans
1 red bell pepper, sliced
2 medium shallots, sliced ¼-inch thick
4 tablespoons olive oil, divided
1 tablespoon cornstarch
2 teaspoons toasted sesame oil
Salt and black pepper
8 ounces dried soba noodles
Zest and juice of 3 limes, about ⅓ cup juice
¼ cup olive oil
1 tablespoon toasted sesame oil, plus more to taste
1 cup coarsely chopped roasted peanuts, salted or unsalted
1 cup coarsely chopped fresh mint leaves
Salt, for cooking the noodles
Preheat the oven to 425°F.
Bring a large pot of water to a boil with 1 tablespoon of salt.
Set out two large sheet pans and position oven racks in the upper and lower thirds of the oven.
Cut the tofu in half lengthwise, then slice it crosswise into ½-inch-thick slabs.
Cut each slab crosswise into strips approximately 2 inches long and ½ inch wide.
Pat the tofu thoroughly dry with paper towels. Removing excess moisture helps it crisp in the oven.
Place the green beans, sliced bell pepper, and shallots on one sheet pan.
Drizzle with 2 tablespoons of olive oil and season with ½ teaspoon of salt and ¼ teaspoon of black pepper.
Toss until evenly coated and spread the vegetables in a single layer.
In a medium bowl, combine the cornstarch, remaining 2 tablespoons of olive oil, 2 teaspoons of sesame oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper.
Add the tofu and gently stir until the pieces are coated.
Spread the tofu in a single layer on the second sheet pan.
Place both sheet pans in the oven, one on each rack.
Roast without flipping for 20–25 minutes, until the tofu is browned and crisp and the vegetables are tender with some caramelized edges.
Check the vegetables and tofu toward the end of cooking, as their browning rates may differ.
While everything roasts, whisk together the lime zest, lime juice, remaining ¼ cup of olive oil, and 1 tablespoon of toasted sesame oil in a large bowl.
Add the soba noodles to the boiling water and cook according to the package directions.
Drain in a colander and rinse thoroughly under cool running water until the water runs clear. This helps remove excess starch and prevents the noodles from becoming mushy.
Shake off the excess water, then add the noodles to the bowl with the dressing.
Allow the roasted vegetables and tofu to cool slightly.
Add them to the dressed noodles along with the chopped peanuts and fresh mint.
Toss gently to combine. Taste and adjust with additional lime juice, sesame oil, salt, or pepper as needed.
Serve warm or at room temperature.
Choose your noodles carefully:Soba noodles may contain wheat. If you need a gluten-free meal, select noodles labeled gluten-free and verify that they contain only gluten-free ingredients.
Use different vegetables:Asparagus, broccoli, snap peas, or sliced carrots can replace some or all of the green beans and bell pepper.
Swap the peanuts:Cashews or almonds provide a similar crunch. For a nut-free version, try toasted pumpkin or sunflower seeds, provided they're appropriate for your dietary needs.
Adjust the dressing:Start with the specified amount of sesame oil, then add more gradually until the flavor suits you.
Make it less tangy:Begin with less lime juice if you prefer a milder dressing, then add more to taste.
Get crispier tofu:Press the tofu before cutting it, or pat it thoroughly dry with paper towels. Avoid crowding the pan.
Store leftovers:Refrigerate promptly in an airtight container. The noodles may absorb some dressing as they sit, so add a squeeze of lime or a small drizzle of sesame oil before serving again.
Tofu contains protein that helps support muscle maintenance and recovery. Maintaining muscle as we age is important for everyday activities such as climbing stairs, carrying groceries, and getting up from a chair.
The peanuts add additional protein along with healthy unsaturated fats.
Green beans and red bell pepper add fiber, vitamins, and minerals. Eating a variety of vegetables supports overall health and helps make meals more colorful and satisfying.
Soba noodles supply carbohydrates that help fuel everyday activities and exercise. Combined with tofu, peanuts, and vegetables, they make a more substantial meal than noodles alone.
This recipe brings together protein, vegetables, carbohydrates, and fats in one convenient dish. Preparing a complete meal doesn't have to mean cooking several separate recipes.
You can also adjust the vegetables and toppings based on what you have available, making it easier to keep healthy meals in your regular rotation.
