2 tablespoons butter, melted
1 (4-ounce) package ramen noodles, seasoning packets removed and discarded or reserved for another use
1 tablespoon sesame seeds (optional)
¼ teaspoon salt, or to taste
¼ cup Thai sweet chili sauce
2 tablespoons white vinegar
2 tablespoons mayonnaise
1 tablespoon avocado oil or other neutral-flavored oil
6 cups coleslaw mix
¼ cup sliced green onions
8 ounces peeled large shrimp, tails removed and thawed if frozen
1 teaspoon chili powder
½ teaspoon salt
1 tablespoon neutral-flavored oil
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Place the dry ramen noodles in a medium bowl and break them into small pieces. Add the sesame seeds, if using, melted butter, and salt. Toss until the noodles are evenly coated.
Spread the mixture over the prepared baking sheet and bake for 5–8 minutes, or until lightly golden brown. Watch carefully to prevent burning. Remove from the oven and set aside to cool.
In a large bowl, whisk together the Thai sweet chili sauce, vinegar, mayonnaise, and oil until well combined.
Add the coleslaw mix, half of the sliced green onions, and the toasted ramen croutons. Toss gently until everything is evenly coated.
Place the shrimp in a medium bowl and toss with the chili powder and salt.
Heat the oil in a medium skillet over high heat. When hot, add the shrimp in a single layer.
Cook undisturbed until the shrimp begin to turn pink, about 2 minutes. Flip and cook for another 1–2 minutes, until opaque throughout and cooked through.
Divide the salad among wide, shallow serving bowls. Top with the cooked shrimp and remaining green onions.
Serve immediately while the ramen croutons are still crisp.
Save time: Use pre-cooked shrimp. Add them directly to the salad, or warm them briefly in the skillet.
Make it your own: Add shredded lettuce, carrots, cucumber, bell peppers, or any extra vegetables you have on hand.
