
There's no rule saying eggs have to be reserved for breakfast. This simple baked egg dish is an easy, protein-forward meal that works beautifully for breakfast, lunch, or dinner.
Lightly adapted from the Cooking + Kate blog, the recipe combines juicy roasted cherry tomatoes with Parmesan, fresh basil, garlic, and perfectly baked eggs. Best of all, it requires very little prep and can be on the table in under 30 minutes.
No complicated measuring is necessary—just use enough tomatoes to cover the bottom of your baking dish. Serve it with a slice of whole-grain toast for dipping into the rich tomato juices and runny egg yolks.
Serves 2–4
3 cups (about 1½ pints) cherry tomatoes, halved
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh basil, plus extra for garnish
2 tablespoons olive oil
Salt and freshly ground black pepper
1–2 teaspoons minced garlic
4 eggs
Toast, for serving
Preheat the oven to400°F.
Arrange the halved cherry tomatoes in an even layer in a medium baking dish or large ovenproof skillet.
Roast the tomatoes for12 minutes. Remove the dish from the oven and sprinkle the tomatoes with Parmesan and basil. Drizzle with olive oil and season lightly with salt and pepper.
Stir the garlic into the tomato mixture. Carefully crack an egg over the tomatoes, keeping each yolk intact. Repeat with the remaining eggs, spacing them evenly throughout the dish.
Return the dish to the oven and begin checking the eggs after8 minutes. The whites should be set while the yolks still jiggle slightly when the pan is gently shaken. If the whites need more time, return the dish to the oven for another 1–2 minutes. Remember that the eggs will continue cooking slightly after they come out of the oven.
Season with additional salt and pepper and sprinkle with fresh basil. Serve immediately in shallow bowls with toast for dipping.
