Healthy Recipe: Honey Garlic Chicken or Tofu & Zucchini

Zucchini is one of summer’s most versatile vegetables, and this quick skillet meal puts it to delicious use. Adapted from The Kitchn, it combines tender chicken and zucchini with a sweet, savory, slightly spicy honey-garlic sauce.

Bite-sized pieces of chicken and zucchini are cooked separately so each has a chance to brown before everything comes together in the sauce. Toss in walnuts for extra crunch and healthy fats, or substitute tofu for the chicken for a plant-based version.

Serve it over rice for an easy weeknight meal that delivers protein, vegetables, and plenty of flavor.

Ingredients

Sauce

• ¼ cup hot honey (or regular honey plus a dash of hot sauce)
• 3 tablespoons water
• 2 tablespoons soy sauce or tamari
• 2 teaspoons rice vinegar or apple cider vinegar
• 2 teaspoons cornstarch

Chicken (or Tofu) and Zucchini

• 1 pound boneless, skinless chicken thighs (or extra-firm tofu)
• 1 teaspoon kosher salt, divided, plus more as needed
• 2 tablespoons olive oil, divided
• ½ cup broken walnuts (optional)
• 1 pound zucchini (about 3 medium), quartered lengthwise and cut crosswise into ½-inch pieces
• 2 medium scallions, thinly sliced, white and green parts separated
• 1 tablespoon minced garlic
• Cooked rice, for serving


Instructions

  1. Make the sauce:In a small bowl, whisk together the honey, water, soy sauce or tamari, vinegar, and cornstarch until smooth. Set aside.

  2. Prepare the chicken:Pat the chicken dry with paper towels and cut into 1-inch pieces. Season with ½ teaspoon salt. If using tofu, press it well to remove excess moisture before cutting it into cubes.

  3. Heat 1 tablespoon of the olive oil in a large, heavy skillet over medium-high heat. Add the chicken in a single layer and cook undisturbed until browned on one side, about 5 minutes.

  4. Flip the chicken. Add the walnuts, if using, and cook for another 3–5 minutes, until browned. Transfer the chicken and walnuts to a bowl.

  5. Add the remaining tablespoon of olive oil to the skillet. Arrange the zucchini in an even layer, season lightly with salt, and cook undisturbed until browned on the bottom, about 2 minutes. Toss and cook for another minute, until tender-crisp.

  6. Stir in the garlic and white parts of the scallions. Cook until fragrant, about 30 seconds.

  7. Return the chicken and any accumulated juices to the skillet. Stir the sauce again, then pour it into the pan. Cook, stirring frequently, until the sauce thickens and the chicken is cooked through, about 1–2 minutes. Chicken should reach an internal temperature of 165°F.

  8. Serve over cooked rice and garnish with the reserved scallion greens.
